Peanut sauce

Yellow onion

Cloves minced garlic

Fresh jalapeno seeded and sliced

Canned diced tomatoes, including juice

Worcestershire sauce

Firmly packed light brown sugar

Red wine vinegar

Ground cumin

Salt

Baby Back Ribs

Combi Oven/Steamers

 

Preheat to: 325F in the Combi mode

 

 

BARBEQUE SAUCE

Heat peanut oil in saucepot over medium heat. Add onion and sweat till translucent. Then add garlic and jalapeno cook for 3 to 5 minutes. Add remaining ingredients. Bring to a boil and reduce heat. Reduce until thick. Remove from heat and let cool.

 

COOKING THE RIBS

No plastic wrap or foil is required. Place ribs into 2 “ hotel pan. Cover ribs with 1 cup of B-B-Q sauce. Set the Steam-On-Demand timer for 8 minutes and hit the button. This will help reduce the cook time of the ribs and increase tenderness. Cook for 40 minutes. For fall of the bone ribs cook for an additional 15 minutes.

Use remaining sauce at the tableside, Enjoy!
