Roasted Whole Baby Carrots and Brussel Sprouts

Parsley Steamed Potatoes

Baby red potatoes, quartered

Melted butter or olive oil

Salt and pepper

Ranch Marinated Combi Fried Chicken

4 pieces

8 ounces

1/2 cup

Thigh cut bone-in chicken

Your favorite ranch dressing

Buttermilk

AP flour

Mrs. Dash seasoning

Liquid eggs

Roasted Whole Baby Carrots and Brussel Sprouts

  1. In the Steam mode, lightly steam your vegetables at 225° for 3 minutes for Brussel Sprouts and 5 minutes for whole baby carrots. Cool quickly.

  2. After cooling, toss the vegetables with the seasoning and oil.

  3. Pre-heat in the Combi mode to 500° and 10% humidity.

  4. Place ingredients on a well oiled sheet pan. Cook for 3-4 minutes depending on your desired look.

Parsley Steamed Potatoes

  1. Pre-heat in the Steam mode at 212°.

  2. Load the quartered potatoes, single layered in a perforated pan.

  3. Cook for approximately 13-16 minutes depending on your desired texture.

  4. Remove from the oven and toss in a mixing bowl with seasoning and butter.

  5. Serve immediately.

Ranch Marinated Combi Fried Chicken – Using the Core Probe

  1. Mix dressing and buttermilk. Marinate chicken thighs in the mixture for at least 24 hours.

  2. Mix flour and dry seasoning in a pan large enough to cover the chicken.

  3. Remove excess ranch dressing marinate from each chicken thigh. Dredge the chicken in the flour. Submerge the chicken in egg. Recoat with flour.

  4. Preheat the oven in the Combi mode to 350° with 15% humidity – Set the control for a pull temperature of 180°.

  5. Cover the chicken completely, as liberal or conservative as you like, with the flour and seasoning mixture. Shake off excess seasoning.

  6. Place the chicken on a well oiled sheet pan and spray liberally with spray oil. Do not be afraid to cover the whole chicken thigh, this is important to initiate browning.

  7. Insert the core probe in the chicken. Place the chicken in the combi oven and plug in the core probe into the connection on the control panel.

  8. Cook time for a 10 oz thigh should be around 25-30 minutes.
