COMBI SCHOOL FOOD

INGREDIENTS

24 slices

¾ lb to 1-1/2 lbs

3 lbs

White whole grain sandwich bread

2% milk processed cheese (1/2 oz slices)

Any brand French fries – shoestring length

Recommended Blodgett Equipment:

BCX-14 or BX-14 Combi Oven

Preheat to: 400F on the combi mode

  1. Set oven to “Combi” at 400 degrees

  2. Line sheet pan with pan liner. NOTE: there is no need to spray pan or bread with a “food release” product or add butter or margarine to pan or bread.

  3. Top each slice of bread with 2 to 4 (depending on your menu requirements) ½ ounce slices of processed cheese. Make sure to center cheese on bread slice.

  4. Top cheese with additional slice of bread. Make sure to cover cheese completely. Cover and set aside.

  5. Pan frozen French Fries on Blodgett French Fry pan or on a perforated full size sheet pan. Spread evenly in a single layer to edges of pan.

  6. Place frozen fries into Combi oven, set timer and cook for 6 minutes

  7. When time has elapsed on French fries, add cheese sandwiches, reset timer for additional 6 minutes, or until sandwiches are golden brown and fries are sizzling.

The Result: A winning combination of a crispy, crunchy gooey toasted cheese sandwich, without added fat or additional calories, and fast food style French fries without deep frying!
