BACK TO SCHOOL
Here in Vermont, summer is almost
over, Labor Day
is just around the corner and the students are heading back to
school.
In preparation for the 2010-2011
school year, Blodgett and the New England Culinary Institute teamed up to teach Burlington school
district's food service staff how to prepare more nutritious
meals for its school system. The training focused on healthy school food
and the benefits of steam cooking in particular.
What will they be cooking in those
Blodgett steamers? - as much local product as they can get. BSD
was recently recognized in Everyday with Rachael Ray magazine
for their commitment to using locally grown products in kid
friendly dishes. "We're up to 23 farms now that we work with
through the Burlington schools. A large percentage of our food
comes and goes back into our local economy," said Doug
Davis, the director of food service for Burlington Public
Schools.

Technologies - In Steam
Mode, steam is produced using a steam generator. The oven
automatically self flushes when the temperature falls below 140°F
(60°C).
The self flush removes any loose limescale decreasing the
frequency of deliming. Combi Mode and Moisture Injection use
boilerless technology for an instantaneous reaction - no waiting
