HALF SIZE COMBI OVENS

Blodgett is very pleased to introduce the versatile all NEW BCP and BCM Series Combi Ovens. The BCP and BCM full size oven are available with two great control options (manual and programmable) along with two different rack configurations. Whatever you select, you are guaranteed a quality oven that will improve product quality and increase yield while decreasing your labor and cleaning costs.

STANDARD FEATURES - ALL BCP & BCM SERIES OVENS

  • CombiWash Self Cleaning System - The automatic cleaning system ensures a spotlessly clean oven chamber with no soap residue. CombiWash® uses a minimum amount of water and chemicals, saving you money. Plus you choose between four cleaning programs based on your needs.

  • EXCLUSIVE Semi Automatic Deliming* - When you initiate the deliming process, it automatically pumps in the correct amount of solution. What could be easier? No need to call for service.

  • Versatile Configurations - 2 rack configurations available, 2.5" (64mm) vertical spacing for gastronorm pans, 3.35" (85mm) vertical spacing for North American hotel pans

  • Total Fan Control - 9 speed, auto-reversing fan provides uniform baking and roasting results.

  • One Oven - Two Technologies - In Steam Mode, steam is produced using a steam generator. The oven automatically flushes the steam generator throughout the day removing any loose limescale decreasing the frequency of deliming. Combi Mode and Moisture Injection use boilerless technology for an instantaneous reaction - no waiting for steam generation to come back up to temperature.

  • Versatile Door with Safety in Mind - Stainless steel door is available in left or right hand hinge. Plus the door is field convertible with the addition of a kit. The door hinges stop at 110° and 180° making loading and unloading of products safer and easier. Vented double glass ensures that the temperature on the outside of the door remains below 150°F (65°C)

  • Core Probe Cooking - The multi point core temperature probe is located outside the oven chamber for easy handling and reduced strain on the probe.

  • Quality Construction - Complete 304 stainless steel construction inside and out.

  • User-friendly touchpad control

  • Operating modes include Hot Air, Steam, Low Temperature Steam, Forced Steam, CombiOptima automatic humidity control, Retherm, Proofing, Delta-T and Cook & Hold.

  • CombiOptima, adds or removes moisture as needed. Improves product quality while reducing shrinkage. Simply choose the percentage of humidity and CombiOptima does the rest.

  • BCP control holds 200 product programs – each with up to 10 stages.

  • 15 recipe catalogs for easy retrieval - recipes can be grouped into categories (beef, chicken, cookies, etc.)

  • 85°-480°F (30°-250°C) temperature range, 575°F (300°C) preheating

  • Programmed time delay start

  • HACCP compliant control - ideal for quality control and documentation of preparation processes. HACCP automatically collects and saves data on production time and duration, production temperature and core temperature of each preparation.

  • USB connection for recipe backup and upload as well as HACCP data transfer to your computer

  • Two core probes may be connected that work independently.

WATER QUALITY INFORMATION

Water quality is a major factor affecting the function, reliability and life of your combi. Steam generator maintenance as well as the use of good quality feed water are the responsibility of the owner/user. The use of poor quality feed water will void your warranty. If you are unsure of water quality, consult a local water treatment specialist and have the water analyzed. Your water supply must be within these general guidelines:

  • Total dissolved solids: Less than 100 PPM

  • Total alkalinity: Less than 80-120 PPM

  • Silica: Less than 13 PPM

  • Chlorides: Less than 30 PPM

  • pH Factor: 7.0 - 8.0

  • Sulfates: Less than 40 PPM

  • Chlorine: 0 PPM

Water which fails to meet these standards should be treated with professional water treatment. Blodgett, while not a water expert, offers filters purely as a convenience to you our customers. Our current partner for steam generator combi ovens is Terry. See below for information on Terry water filters.

  • When combined with a sediment and chlorine filter will reduce the amount of lime scale build up and other issues related to poor water quality.
