Pre-heat the Blodgett Combi oven to 300F
in combi mode.

Combine salt, pepper, poultry seasoning,
sage and paprika. Rub onto the turkey.

Place the turkey on the Blodgett
Rotisserie Rack
then place the rack in a full size hotel pan.

Load
the turkey into the oven.

Once the door is shut, set the STEAM ON
DEMAND button for 8 minutes.

Cook the turkey to an internal
temperature of 165 degrees, approximately an hour and a half.
TIPS:

There is no need to tent your turkey,
the moist environment of the Combi creates a quality product without
covering.

To create a nicely browned exterior,
increase the oven temperature by 25 degrees when the internal
temperature reaches 160 degrees F.
