  • WELL INSULATED – with up to 2-1/2” of energy efficient mineral wool board insulation that stays in place to eliminate hot or cold spots.
  • SAVES WATER – a thermostatically controlled quench system means water is allowed to cool before being released down the drain. Some manufacturer’s mix cold water with the heated quench to cool it resulting in additional water essentially being washed down the drain.
  • FULL PERIMETER DOOR GASKET – keeps hot air and moisture in the oven, right where you need it.

Hydrovection standard control

  • MODE SELECTION switch at the top of the controls allows you to choose between 4 different modes, hydro, hydro max, hot air, and cool down.
  • THERMOSTAT DIAL has a versatile temperature range of 150 – 500 degrees F. The dial also features “Retherm” and “Fry” range indicators for your convenience.
  • LOW TEMPERATURE ROAST & HOLD with the integral core temperature probe lets you roast product at your convenience and hold it for serving at a later time. This produces a quality product with a higher yield than traditional roasting. The core temperature probe is detachable for precise probe placement and easy cleaning.
