Chef Pax’s history extends to such companies as; Hilton Corporation Executive Chef, Doubletree Resorts Executive Chef, Hyatt Regency Executive Sous Chef, Ritz Carlton Hotel Chef de Cuisine, and Marriott Resorts International Banquet Chef. Chef Pax is a graduate of the Culinary Institute of America with a strong background in; gourmet fine dining, banquet production, menu development, ice sculpture, and garde manger display. Some of Chef Pax’s culinary accolades include; CIA Culinary Olympic Team, 2 time ACF Gold Medal US Chefs Open, Sliver Medal Southeastern Food Salon, NBC Atlanta Chef Recognition.
Previous business/restaurant ownership included Roll-a-Way Gourmet, JP Productions. Pax’s involvement with Cotton Group LLC included: food service facility acquisitions/ mergers, commercial investments, and B2B Wall Street investment strategies. Pax has an established professional history and record of proven results respective to; Sales, P&L, business development, negotiations, end customer development, food service equipment dealer development, product training, customer service, and winning solutions for improved business profitability.
Most recent and prior to joining BLODGETT, Chef Pax worked with competing manufacturers in the Combi industry. Pax headed up southeast sales management and culinary development of enhanced cooking technology. Pax’s work with Combi cooking include; ease of use, energy efficiency, effective cooking solutions/ methods, improved food cost, reduced labor cost, improved food constancy and quality. Chef Pax’s product development brings; specialized culinary applications, revolutionary cooking methods not common to the industry, and culinary innovations for mainstream food service hospitality market segments.
